The Third Signature Dish Dinner Takes Place at Alma Prague

Alma Prague is one of those restaurants that has built a distinctive identity in just a few short years - unpretentious yet quietly confident.

Its philosophy is rooted in seasonal ingredients, close collaboration with local producers, house-made bread, fermentation, and a style of cooking that allows the ingredients themselves to take centre stage. This approach has established Alma as one of the most exciting restaurants on the contemporary Czech gastronomic scene, earning 13 points and 2 toques in the latest Gault&Millau Guide.

On Thursday, 27 August, Alma Prague will become the third stop of the Gault&Millau Exclusive Dinner Regional Tour 2026, a series that, over the course of several months, presents ten exceptional restaurants across the Czech Republic and their signature tasting menus.

For this special occasion, the culinary team has created a five-course seasonal menu built around the finest ingredients from local producers. Each course will be accompanied by thoughtfully curated wine pairings from Alma's own wine cellar or sophisticated non-alcoholic alternatives, crafted with the same dedication to flavour and balance as the dishes themselves.

The experience begins even before dinner is served. Guests will be invited on a guided tour of Alma, including areas normally hidden from the public, offering a unique insight into the restaurant's philosophy and day-to-day operations. Signature Dish Dinner at Alma Prague is therefore much more than a tasting menu - it's an opportunity to discover the restaurant from an entirely different perspective.

Are you ready to step inside the world of Alma?

As always, we asked one of the evening's key protagonists, Head Chef Petr Žídek, a few questions about the upcoming event:

How did you approach creating the menu for this evening?

We wanted our guests to experience some of the dishes that have already appeared on our menu, alongside a few new creations that we simply love ourselves. Everything is based on the season and on the ingredients that are at their absolute best right now. We want every element on the plate to have a purpose—nothing more, nothing less.

If you had to choose just one course from the menu, which would it be and why? Where did the inspiration come from?

I'd choose the roast pork.

It's exactly the kind of dish that defines our style. It appears simple and familiar, but there's an enormous amount of work and attention to detail behind it—which is precisely how we like to cook. Perfectly roasted Přeštice pork served with apricot, grilled cabbage with pork tongue and shallot, an intensely flavoured apricot sauce and candied fennel is, to me, the ideal Czech summer dish made from exceptional ingredients.

Which course do you think will surprise guests the most, and why?

I think it will actually be the roast pork. At first glance it may seem like quite a rich dish, but it's surprisingly fresh and vibrant in flavour.

Then there's our small amuse-bouche—pickled unripe gooseberries, a light Olomouc ripened cheese foam, lovage and crispy potato. I'm sure this will be the course that sets the tone for the entire evening and pleasantly surprises our guests from the very first bite.

Your non-alcoholic pairing was recently ranked No. 25 in Europe's 50 Best. What makes your drinks so unique?

For this tasting dinner, we wanted the non-alcoholic pairing to be just as memorable as the menu itself.

We work with seasonal ingredients, fermentations, macerations and our own house-made extracts, allowing us to create complex flavours that enhance the character of each dish. We like to say that removing alcohol doesn't mean removing character.

I believe this philosophy is what makes our bar truly unique and one of the reasons why it achieved such a remarkable position in the Europe's 50 Best rankings.

What do you hope guests will take away from the evening?

Above all, I hope they leave feeling good.

I'd like them to realise that great food doesn't have to be complicated or extravagant. Even the simplest ingredient can become something extraordinary when treated with respect. And ideally, they'll leave wanting to return and thinking about food in a slightly different way.

Practical Information

The Signature Dish Dinner at Alma Prague will take place on 27 August 2026 and will feature a five-course tasting menu, with the option of wine pairing, sophisticated non-alcoholic pairing or drinks ordered à la carte.

The evening begins with a welcome drink and guided tours from 6:15 pm to 6:45 pm, followed by dinner at 7:00 pm.
