Gault&Millau
History
The Gault & Millau guide is considered one of the best guides for presenting the best restaurants and establishments around the world. It was founded by two French journalists and food lovers, Henri Gault and Christian Millau, in 1965. They were particularly known for promoting so called nouvelle cuisine, a style of cooking that emphasizes lightness, fresh ingredients and creative presentation, which meant a departure from traditional French cuisine with heavy sauces. This guide not only recognizes renowned chefs, but also promotes the discovery of new talents and encourages innovation and international influence in cuisine. As a result, Gault & Millau have become major figures in the world of gastronomy and their guide has gained international recognition and prestige.
