Gastro Mach Summit 26 brings together chefs, restaurateurs, hoteliers, managers, designers, technology companies and other professionals who look at gastronomy from a broader perspective.

For the first time, it will be a two-day event, and for the second time it will take place at the inspiring Voděrádky venue near Prague. Not an event for just a select few, and not a large anonymous trade fair with little room for networking.

Five hundred people who are helping move Czech gastronomy forward will come together each day, at the right time and in the right place. Part of the programme will be shared across both days, while other sessions will be unique to each day. Some of the key speakers will appear on only one of them.

For two full days, the entire venue will belong exclusively to the Summit. An amphitheatre for 300 people, two halls, an attic space, a café and outdoor food zones. Ten different zones to move between depending on what interests you most.

Great food remains the foundation of successful gastronomy. But the success of a modern restaurant also depends on a well-thought-out concept, efficient operations, technology, people management and the ability to respond to a changing world and evolving guest expectations.

That is precisely why we believe Gastro Mach Summit 26 is exceptional – and why we are proud to be actively involved in its organisation and support. Our role at Gastro Mach Summit goes beyond partnership. As Gault&Millau, we want to bring our own professional perspective, experience and ability to select the people and topics that we believe are genuinely moving Czech gastronomy forward.

That is why we have also been actively involved in shaping the programme and curating its gastronomic section. Our goal was to bring together respected figures from contemporary Czech gastronomy and share their experience not only through cooking, but above all through their opinions, know-how and discussion about where the industry can go next.

Because we believe the role of Gault&Millau is not only to evaluate gastronomy as it is today. We also want to be part of the conversation about what it can become tomorrow.

From a Well-Designed Restaurant to the Question of How Gastronomy Will Change in Five Years

This year’s programme explores the topics that are directly shaping the way gastronomic businesses operate today.

Efficiency & Design highlights the fact that a successful restaurant does not begin the moment it opens its doors to guests. Many crucial decisions are made much earlier – when designing the space, shaping the concept and setting up operational processes. The planning and design segment will feature true international experts from Livit, the world’s largest global F&B design company: Miguel Chilleron and Jed Hernandez, joined by Tomáš Mráz, leader and visionary behind Piano Group.

Sci-Tech presents AI, data and new technologies not as a distant vision, but as tools that are already changing the way gastronomic operations are designed and managed. This programme block will feature Pavel Štěrba and René Müller from BC21, Tomáš Lavický, Manager of the Bernard Brewery Visitor Centre, as well as Cyril Svozil Jr. from Fenix Group and Jan Plch from SMA & R&D, Exergyn.

The Future of the Industry opens up the question of what gastronomy may look like in the years ahead and what changes restaurateurs and other professionals should start preparing for today, viewed from several different perspectives. The panel discussion will feature René Müller (BC21), Miguel Chilleron (Livit), Miroslav Lekeš (Gault&Millau), Tomáš Mráz (Piano Group), Václav Šulc (Globus) and Michal Debrecéni (Delirest and Primirest CZ&SK).

The programme also gives space to the topic of Food as a source of health, nutrition and longevity – an area that we believe will increasingly shape not only guest expectations, but also the very nature of gastronomic offerings. Speakers on this topic will include physician MUDr. Eliška Selinger, nutrition expert Lukáš Roubík (Institute of Modern Nutrition), chef Marek Fichtner (Červený jelen) and producer Aleš Pokorný (Býkárna).

Alongside the main conference programme, visitors can look forward to masterclasses, live cooking demonstrations, food zones, a podcast studio, an expo and plenty of space for networking and exchanging experience across the entire industry. The line-up will include some of the biggest names in Czech gastronomy, such as Oldřich Sahajdák, Martin Svatek, Martin Staněk, David Viktorín, Jan Horák, Tomáš Valkovič and many more.
