Together with Alufix, a manufacturer of kitchen accessories for cooking, baking and food storage, we thought about how to make your pre-Christmas period more pleasant, as these helpers play a key role in the kitchen at this time of year. And because the holiday season cannot do without the smell of Christmas cookies, a beautiful collaboration was created with Natálie Benk, head chef of Bango bistro in Brno. She created two original recipes for unconventional Linzer cookies which, with the help of Alufix products, you can easily bake and which will add a fresh twist to your Christmas table.
Yuzu Linzer Cookies
Yuzu cream (curd)
4 egg yolks
70 g cane sugar
50 ml lemon juice
20 ml yuzu juice
50 g butter
Lemon zest
Shortcrust dough
240 g all-purpose flour
70 g powdered sugar
40 g almond flour
160 g butter
2 egg yolks
Lemon zest
Yellow food coloring (optional)
A pinch of salt
Procedure
We begin by preparing the dough. In a bowl, mix the all-purpose and almond flour, powdered sugar, a pinch of salt and lemon zest. Add cold butter cut into cubes and quickly rub between your fingers until a crumbly mixture forms. Work in the egg yolks and, if desired, a little coloring. Knead into a smooth dough, wrap in plastic wrap and let chill in the refrigerator for at least one hour.
To prepare the yuzu cream, whisk the egg yolks with sugar, lemon and yuzu juice, and a pinch of salt in a small pot. Heat over low heat, stirring constantly until the cream thickens (it must not boil). Remove from the heat, stir in the butter and lemon zest, and cover the surface with plastic wrap pressed directly onto the cream. Allow it to cool completely and set in the refrigerator.
After cooling, it is ideal to use high-quality food wrap, such as the one by Alufix, which adheres perfectly to the surface of the cream and prevents the formation of a skin. Thanks to the wrap, food stays fresh longer, does not dry out, and its use also prevents the spreading of smells in the refrigerator. It is also suitable for freezing food down to −30 °C, and thanks to its practical cutting slider it is easy to tear off. It is available in three sizes – 300 m × 29 cm, 300 m × 44 cm and 30 m + 5 m × 29 cm for home use – making it suitable for all kitchen situations, from covering creams to keeping herbs fresh or wrapping various ingredients.

Preheat the oven to 170 °C. Roll out the dough to a thickness of 3–4 mm and cut out small candy shapes (or choose another cookie cutter you have at home). Transfer the cookies to a baking sheet lined with parchment paper and bake for 8–10 minutes until golden, then let cool completely.
Spread a little yuzu cream on the bottom cookie, top with a second cookie, and lightly drizzle with melted white chocolate dyed red, if desired. Store in a cool place. They taste best the next day, when the flavors combine beautifully.
Miso-Cherry Linzer Cookies
Miso Linzer dough
240 g all-purpose flour
70 g powdered sugar
40 g almond flour
160 g cold butter
2 egg yolks
1 tablespoon white miso paste
A pinch of salt
Cherry jam
500 g sour cherries (or sweet cherries)
200 g sugar
Procedure
For the jam, place the cherries with sugar into a pot and heat over medium heat until the mixture reduces to about half its volume. Then blend it with an immersion blender until smooth and let cool. It will naturally thicken as it chills.
For the dough, combine the all-purpose flour, almond flour, powdered sugar and a pinch of salt. Add the cold butter, work into a crumbly mixture, then add the egg yolks and miso paste. Wrap the dough in plastic wrap and let rest in the refrigerator for at least one hour.
Preheat the oven to 170 °C. Roll the dough out to a thickness of 3–4 mm and cut out cookies: ideally pairs where the top piece has a cut-out. Bake for 8–10 minutes until golden and allow to cool completely.

Spread the bottom cookies with cherry jam and top with the perforated upper cookie. Let rest for at least two hours so the flavors blend and the cookies soften.
