Signature Dish Dinner: Second Stop – Reason

The Gault&Millau culinary tour continues on 17 June 2026 at Restaurant Reason in Prague. This is where the next evening of the Signature Dish Dinner series will take place — a concept that, over the course of several months, will showcase ten exceptional restaurants from across the Czech Republic and their signature tasting menus.

Restaurant Reason is located in the iconic Masaryčka building by Zaha Hadid Architects, eleven floors above the vibrant centre of Prague. The space itself is captivating, combining contemporary architecture, elegant interiors, and panoramic views of the capital. Every detail contributes to a carefully curated gastronomic experience.

The restaurant’s culinary vision is led by Head Chef Jan Horák, whose fine dining concept is built on deep experience, technical precision, and creativity. Czech flavours naturally intertwine with European influences, while seasonality, locality, and the utmost respect for ingredients remain at the heart of every dish. The open kitchen allows guests to follow the entire preparation process firsthand. Thanks to this approach, Restaurant Reason received 14.5 points and 2 toques in its very first evaluation by the Gault&Millau guide.

To learn more about what guests can expect from the evening, we spoke directly with Chef Jan Horák:

How did you approach creating the menu for this evening?

We wanted to create a menu that gradually builds in intensity while presenting our cuisine in its purest form. We focused on seasonality, flavour, and the overall dining experience.

If you had to choose just one dish from the menu, which would it be and why?

I would choose our bread cavatelli, as it best represents our philosophy and the way we think about and create food.

Would you consider it your signature dish? Where did the inspiration come from, and how long has it been on the menu?

Yes, I would. The inspiration comes from our experiences, travels, work with local and seasonal ingredients, and our efforts to minimise food waste. Different variations of this dish have appeared on our menu for several seasons now.

Which course do you think will surprise guests the most, and why?

I think the combination of turbot, elderflower, and rhubarb.

What is it like cooking on the rooftop of Masaryčka? Has it become routine, or do you still find yourself admiring the views of Prague?

It’s an extraordinary place. You get used to the daily operation, but the views of Prague still manage to capture your attention, even after a long time.

What should guests take away from this evening?

Above all, a wonderful experience, a memorable evening, and a desire to return.

Practical Information

The Signature Dish Dinner at Restaurant Reason will take place on 17 June 2026 from 6:00 pm and will feature a six-course tasting menu with the option of both wine and non-alcoholic pairings.

An unforgetable evening will start with welcome drink at 6:00 pm on the terrace with Prague stunning view, the dinner will start at 6:30 pm. The recommended dress code is Smart Casual.
