Arriving at the Salabka restaurant, even from a distance, feels like entering a different world from the nearby high-rise buildings of one of Prague’s housing estates. The building is located under a large vineyard not far from the botanical garden and the zoo. The abundance of stone and wood immediately greets you with its warmth as soon as you open the door. The spacious interior has a truly unique spirit, and looking up at the restaurant’s high ceiling gives you a feeling of grandeur, while at the same time adding calm and airiness to the entire space. The restaurant has two floors and a cellar. The best seats on the upper floor are located around the perimeter of the restaurant and offer a unique view of the vineyard. The staff are perfectly trained and know all the ingredients and procedures used. Chef Petr Kunc’s menu will surprise you with a large number of amuse bouches before the meal begins and three courtesies of the house after dessert. The amazing presentation of the pea soup with flower decorations was stunning, and the pepper roll was absolutely delicious. Homemade whipped lardo and onion butter coated in a delicate gel with pieces of gold was a great start. The asparagus and its combination with citrus fruits was perfect, only the black tree-shaped leaves were slightly tougher in consistency. The pigeon and its combination with foie gras and pistachios was a big taste surprise. Here you could see how a mere trifle can change the whole dish and how all the little details really matter. The entire menu is dominated by perfect ingredients, and each course is interesting. Salabka is also a great place to taste homemade spirits and, above all, wine, not only from its own production, but also from other wine regions.
