The Papilio Restaurant is part of a developing luxury hotel complex. The entrance to the restaurant itself is the first sign of the higher quality, along with interior features such as vaulted ceilings, comfortable sofas, a glass-fronted vinotheque located in the space, a chef's table and an open kitchen. The eight seats at the chef's table offer a breathtaking view of the work of the chefs, who pay meticulous attention to every detail of the dishes they prepare. Jan Knedla, a renowned chef with international experience in haute cuisine, prefers innovative approaches to cooking and is able to combine traditional and modern techniques based mainly on French gastronomy in an interesting way. The restaurant currently offers six-, eight- and ten-course menus, with a three-course menu available at lunchtime. One menu is based on seasonal produce and is regularly varied. The kitchen personally introduces each course, which is very pleasant. To start, the chefs serve a range of canapés that stimulate the palate with a refined selection of concentrated flavors. Although the canapés are varied, you will find signature pieces. The spring menu was remarkable for white asparagus served with roasted hazelnuts. The sweet asparagus together with the buttery-nutty flavor, which was complemented by a delicate whey sauce and pureed bear garlic, provided a pleasant harmony in the mouth. Zander, a traditional Czech fish, was served with kohlrabi and a sauce of roasted kohlrabi, complemented by thinly sliced spring onions and verbena. The combination of the mineral taste of the fish with the slightly sweet and spicy kohlrabi is rounded off by verbena, whose acidity naturally complements the whole dish. The dark chocolate mousse dessert impressed with its lightness. It was served with a consommé of rhubarb and strawberries and was accompanied by rhubarb sorbet and pink peppercorns for a refreshing touch. The wine list offers an extensive selection of wines from around the world. Lack of professional staff can be a slight limitation in providing service to a larger number of guests and in further growth. The Papilio Restaurant is beautiful with all the trimmings, easily moving you to a magical world of magical flavors, aromas and experiences of haute cuisine.
