Signature Dish Dinner: Opening Evening - Soyshi
The Gault&Millau culinary tour will kick off on 24 May 2026 at Soyshi in Brno. This opening evening marks the beginning of the Signature Dish Dinner series, which over the coming months will showcase 10 outstanding restaurants from across the Czech Republic and their signature tasting menus.
Soyshi itself impresses from the very first moment with its airy, minimalist interior, refined down to the smallest detail. At its heart is an open kitchen that draws guests directly into the action. On the plate, a modern Asian fusion comes to life — blending Japanese, Thai, and Vietnamese influences with European precision.
The concept behind Soyshi is the work of three entrepreneurs — Tony Do, Tomi Nguyen, and Tomáš Ngoc — who have brought their experience and attention to detail into the restaurant. In the kitchen, their vision is further developed by chefs Dima Pavliuk and Tuan Anh Do. Their signature style is defined by seasonality, precise work with ingredients, and a playful fusion of flavours across continents. This approach has earned Soyshi a rating of 13 points and 2 toques from the Gault&Millau guide.

If you had to choose just one dish from the menu, which would it be and why?
Definitely the duck, gyoza & black truffle. It’s our signature dish on the à la carte menu, but for this occasion we’ll present it in a more elegant and contemporary way.
How did you approach creating the menu for this evening?
We wanted to present Asian cuisine in a more refined, fine dining style, combined with seasonal ingredients and our own Soyshi twist.
What should guests take away from the evening?
A full stomach and a sense of comfort.

Practical Information
The Signature Dish Dinner at Soyshi will take place on 24 May 2026 from 5:30 pm and will feature a six-course tasting menu with the option of both wine and non-alcoholic pairings.
